Energy Bar


You won't see too many recipes on this site but I had to share this one. I was looking for a clone for Clif Bars and came across this. It's not an exact clone but they sure are good and it gives you a base if your interested in adding your own ideas for ingredients. I recommend using a Kitchen Aid Mixer or something similar because they get pretty sticky and tough toward the end of the mixing.

Preheat oven to 350 degrees

Beat together in a bowl with a mixer:
1/2 cup canola oil or oil substitute or 3/4 cup smashed banana
1 cup of fructose
2 T Molasses
2 Eggs or 4 Large Egg Whites
1 tsp Vanilla Extract (optional)

In another bowl mix together:
1/4 cup of cocoa (optional)
2 cups of rolled oats or 10 grain cereal ground in a blender
2 cups of white flour, unbleached
1/2 tsp of salt
1 tsp of baking powder

Slowly add dry ingredients to the moist ingredients.

Add 2 cups of chocolate chips (optional)
Add 1 1/2 cups of chopped nuts (optional)

When it is well blended spread on a greased 9 x 13 pan or dish and bake for 25-30 mins
Cut while still warm.

Makes 12 - 2 oz. bars.
Approx: 291 cal, 63 grams of carbs, 7 grams of protein, 2 fat
